Team days today and tomorrow. We’re based in the Toon this time, which hasn’t happened in the last two years.
It’s nice to be so close to home, but somehow the closer I am the less baking I seem to do, so today’s contribution was just one cake, and what has now become my quick, simple, standby: a Victoria Sandwich.
Sponge sandwich, with a jam centre and a bit of icing sugar on top. It’s an absolute classic, but it’s also extremely easy, and very quick to make and to cook.
Tim (the blogging Durham-student-in-Germany) posted about a recent sponge cake he made, which netted him a marriage proposal from a Czech girl. I was (sadly?) not the recipient of similar expressions today, but those who ate did say that they liked it, which is enough, I suppose.
